Christmas Goodies for Foodies

Tis the season to be eating like there's no tomorrow. I thought we could add some clever ideas here for Christmas themed goodies. ) I like the sound of this one:


Cornflake Wreath Cookies

1/2 cup butter
4 cups miniature marshmallows
1 teaspoon green food coloring
1/2 teaspoon almond extract
1/2 teaspoon vanilla extract
4 cups cornflakes cereal
1 (2.25 ounce) package cinnamon red hot candies


1. Microwave marshmallows and butter on High for 2 minutes. Stir, then microwave on High for 2 minutes more. Stir again.

2. Add and mix quickly the coloring, extracts, then cornflakes. Drop by spoonfuls in clumps on greased wax paper and decorate with 3 red hots each. (Any kind of candy that looks like a red berry would work.)

3. Let it cool then transfer to lightly greased serving tray with lightly greased fingers.

Mmmm….yummy! I should try it someday. I have one to share which I learned from my favourite chef. It's simple and the kids will love it! It's called Cherry Chocolate Cookies.


Ingredients:


125g butter
1/2 cup castor sugar
1/3 cup brown sugar
1 egg
1 3/4 cups self raising flour
3/4 cup chopped red glace cherries
1/2 cup choc bits


Method:


1) Beat butter, sugar and egg until light and fluffy. Stir in sifted flour, cherries and chocolate bits.
2) Drop 2 level teaspoons of mixture together onto greased oven tray.
3 Repeat with remaining mixture, allowing about 3 cm between cookies.
4) Bake at 180C for 12 minutes or until lightly browned.

Oooo, they sound very tasty, Nazreen. I love glace cherries and every so often I try to make a cherry cake but every time the darn things sink to the bottom of the loaf tin! I don't know what I'm doing wrong but since I only attempt it once in a blue moon I don't suppose it matters that much. :)

Oh I'm not sure why the cherries sink, Kay. It doesn't happen to me when I baked walnut cake. Hmmm…did you mix the cherries and batter well before pouring it into the cake tin?

I asked my mom today on the phone and she said you're supposed to coat them in flour before you add them to stop that happening. She makes a great cherry cake and I kept meaning to ask and forgetting. I'll try that next time!
