Within my extended family, this time of year brings out some yummy home made favorites.  Since I am spending Thanksgiving away from my family this year, I am emailing my aunt for some of her recipes that are favorites for my kids, and I am also digging out some of my own dishes to make … just to keep the hearts close to family Smile

Do any of you have some holiday favorites to share???

Candied Pecans

Ingredients

  • 1/2  cup coarsely chopped pecans
  • 1/4  cup sugar
  • 1  tablespoon butter or margarine

Directions

1. Line a baking sheet with foil. Butter the foil; set baking sheet aside.

2. In a small heavy skillet combine coarsely chopped pecans, sugar, and butter or margarine. Cook mixture over medium-high heat, shaking the skillet occasionally until sugar begins to melt. Do not stir the mixture. Reduce heat to low and continue cooking until sugar is golden brown, stirring the nut mixture occasionally.

3. Remove skillet from the heat. Pour nut mixture onto the foil-lined and buttered baking sheet. Cool completely. Break the nut mixture into small chunks. Store the coated nuts, tightly covered, for up to 1 week. Makes 3/4 cup (4 servings).

*** I typically quadruple this for family events, and the recipe works well with any kind of nut.

Old Time Fudge

Ingredients

  • 2  cups sugar
  • 3/4  cup milk
  • 2  ounces unsweetened chocolate, cut up
  • 1  teaspoon light-colored corn syrup
  • 1  teaspoon vanilla
  • 1/2  cup chopped nuts (optional)
  • 2  tablespoons butter

Directions

1. Line a 9×5x3-inch loaf pan with foil, extending foil over edges of pan. Butter foil; set pan aside.

2. Butter the sides of a heavy 2-quart saucepan. In saucepan combine sugar, milk, chocolate, and corn syrup. Cook and stir over medium-high heat until mixture boils. Clip a candy thermometer to side of pan. Reduce heat to medium-low; continue boiling at a moderate, steady rate, stirring frequently, until thermometer registers 234 degrees F, soft-ball stage (20 to 25 minutes).

3. Remove saucepan from heat. Add butter and vanilla, but do not stir. Cool, without stirring, to 110 degrees F (about 55 minutes).

4. Remove thermometer from saucepan. Beat mixture vigorously with a wooden spoon until fudge just begins to thicken. If desired, add nuts. Continue beating until the fudge becomes very thick and just starts to lose its gloss (about 10 minutes total).

5. Immediately spread fudge in the prepared pan. Score into squares while warm. When fudge is firm, use foil to lift it out of pan. Cut fudge into squares. Store tightly covered. Makes about 1-1/4 pounds (32 pieces

Chocolate Cupcake
 
Ingredients:
 
• 2 cups all purpose flour
• 2 cups sugar
• 1/2 teaspoon baking powder
• 1 teaspoon salt
• 1 teaspoon baking soda
• 1/2 cup shortening
• 3/4 cup water
• 2 large eggs
• 3/4 cup milk
• 1 teaspoon vanilla
• 4 ounces melted unsweetened baking chocolate
 
Directions:
 
Preheat oven to 350 degrees. Line cupcake pans with paper liners.
 
Combine all ingredients into large mixing bowl. Mix at low speed for 30 seconds, and scrape bowl.  Mix at high speed for 3 minutes.
 
Fill liners 1/2 to 2/3 full of batter. Bake 20 to 25 minutes or until toothpick inserted in center comes out clean.
 
Cool for 10 minutes in a pan then remove and place on wire racks to cool completely.
 
Frost when chocolate cupcakes are completely cool.

oh yum!  Thanks, Nazreen!  Cupcakes are a huge hit in our house!  I want to learn how to frost them like the pros ;)
